My Vegan Journey - Week One Update

Happy Friday, All.

I hope this post finds you well and in the best of spirits! Since I'm traveling this weekend, I thought I would provide a quick recap of my first week as a vegan.
 
The week kicked off with a WebEx meeting with Coach Lasse, and the vegan journeyers - Donna, Ayesha, and Charlie. The information provided was quite helpful, and serves as a great base for the next 90 days. On Thursday, I had my individual Skype meeting with Lasse. It was here where the 'digging' and goal setting began. 

My food selection was pretty simple: fruits, veggies. hummus, salads, and (lots of) water. Although I spent time researching recipes that I'd like to make, I did not want to prepare any vegan meals until next week. This week was about getting my body accustomed to not having meat.

My energy level: High

Mood: Enthusiastic

My uh-oh moment of the week took place on Tuesday morning. It was quite cold outside. All I could think about was a nice warm beverage. When I arrived to the office, I headed straight for the kitchen. Without thinking, I grabbed my cup and a pack of Swiss Miss Hot Chocolate. I prepare it, and as I brought the cup to my mouth, I immediately thought "Wait. Check the ingredients." So, I do. O_o. The product contained both milk and whey. *womp, womp*. Needless to say, I now have a vegan hot cocoa mix recipe.

Btw, here's one thing that should know about me: I'm a creature of habit. When it comes to food, I usually eat the same thing over and over again. Back in the day, my friends would ask me to try different foods, but I wasn't having it. (I'd like to think I have gotten better in that department though.)  I said all of that to say -- If I want to be successful on this journey, I have to open myself up to try new things. Which brings me to my recent food discoveries this week: Galia and Sundried Tomatoes.

Galia looks like a canteloupe with the flesh color of a honeydew melon. It's considered a dessert melon, and OMG! It's delicious. I'm seeing a galia, kale, and ginger juice in the near future.

As for the sundried tomatoes, I may be a little late to the party on this one but better late than never, right? I tried the tomatoes in my salad this week and my life has officially been changed (again!). Where on earth have I been?


My Thursday Lunch

I've recorded my starting weight and measurements as well. I plan to track my progress monthly.
So here are the numbers for January:

Weight - 272.6
Bust - 50
Waist - 48
Hips - 49.5
Thigh -  29
